Ingredients

  • 3-4 cups (1 large bunch) kale, stem removed
  • 1/3 cup dried cranberries
  • ½ cup almonds, sliced
  • 4 tablespoons Parmesan cheese (optional)

Dressing

  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions

  1. Chop kale into thin pieces by hand or with a food processor
  2. In a small bowl, mix dressing ingredients together; set aside
  3. In a large bowl, mix kale, cranberries, almonds and Parmesan cheese together.
  4. Pour the dressing onto the salad; toss well.
